Black Bean Pasta with Tomatoes, Pepper and Mushrooms



This is quick, easy - and delicious.

Ingredients:
Black bean spaghetti-Costco  carries this
1 T. oil
Onion-chopped
Mushrooms-thickly sliced
Sweet pepper-thinly sliced length-wised
Garlic-minced
1 -14oz. can of ready cut Italian diced tomatoes

Heat oil in frying pan. Add onions-saute until they begin to soften.
Add pepper and continue sauteing until they begin to soften. Add
mushrooms and cook a few more minutes until they begin soft-ening. Then add garlic and cook a minute. Add tomatoes and simmer for 20 to 30 minutes.
Cook spaghetti according to directions on box. They take about 7 or 8 minutes to cook. Drain and rinse with cool water. Serve and enjoy!

Made roast potatoes for the first time a couple of weeks ago-and they were delicious. I never realized how easy they were to make. I put two tsp. of oil in the pan ( 9x11 ) and cut up about 4 yellow potatoes
